Sometimes the side dishes can make or break a meal, and broccoli cheese casserole is one of my family’s favorites. We serve it at all of our holiday gatherings, and I like to add it to our dinner plans, too.
We are so excited to be working with Blue Plate® Light Mayonnaise with Greek Yogurt, the only mayonnaise made with Greek Yogurt, to bring you this yummy recipe.
Blue Plate Light Greek has 1 gram of protein per serving — the only mayonnaise with protein as a nutrient — and half the calories of regular mayonnaise.
You can use it as you would regular mayonnaise — it still has the creamy, tangy flavor that you love.
Or you can try out recipes developed by Chef Alon Shaya especially for this mayonnaise on the Blue Plate website! I’m always looking for easy lunch ideas that I can throw together while working at home and they have so many options!
Broccoli Cheese Casserole
Here’s what you need to make this broccoli cheese casserole:
-
4 cups chopped cooked broccoli
-
2 eggs, well beaten
-
1 can condensed cream of mushroom soup
-
2 Tbsp grated onion
-
1 cup grated cheese
-
salt and pepper
-
non-stick cooking spray
-
dry bread crumbs
Combine cooled broccoli with eggs, mayonnaise, mushroom soup, grated onion and cheese. Season to taste with salt and pepper.
Pour mixture into a casserole dish coated with nonstick spray and top with bread crumbs.
Bake at 350 degrees F for about 45 minutes, until crumbs are brown.
This is great served alongside grilled sausage or even barbecue beef brisket. The tangy flavor of the Blue Plate Light Greek is a nice addition to the creaminess of the mushroom soup. You haven’t had a side like this before!
